Zoodle Shrimp Scampi

Yields: 4 servings
Total Time: 20 mins

In a bowl mix:

  • 1/2 pound de-veined, thawed shrimp (med-large size)
  • 2 cloves minced garlic
  • 1 tbsp chopped parsley
  • 1/2 tsp kosher salt
  • Black pepper
  • 1 tbsp olive oil

Mix and let marinate 10 minutes

Prepare Zucchini Noodles (1 zucchini per person)

In a large skillet:

  • Melt 2 tbsp unsalted butter
  • Add Shrimp, cook each side 1 minute (tails should be in the transition of opaque to pink), transfer out into a bowl.

    In the simmering butter add:

    • 2 cloves minced garlic
    • 1/2 Lemon’s juice
    • 1/3 cup Dry White Wine (Pinot Grigio) (can substitute chicken broth)

    Let it simmer 2-3 minutes, add:

    • 1 roma tomato, chopped
    • 1 tbsp chopped parsley

    Add the shrimp back in, cook another minute,
    Serve over Zoodles
    Garnish with grated Parmesan Cheese & chopped Parsley
